When we heard that critically acclaimed chef, Tom Barnes would be opening his first restaurant in our very own city, we knew we had to take the chance to reach out and create something special together...
Knowing the philosophy behind critically acclaimed chef, Tom Barnes' food, we wanted to source the most local ingredients we could to produce a crisp, refreshing lager. So we took a trip over to our nearest maltsters, @Fawcettmaltofficial and chose a specialty malt aptly named Halcyon, which is only grown at the Fawcetts Farm, we then paired this with a beautiful varietal of UK Cascade. This result is a bright and clean refreshing lager, with light citrus tones and rounded malt body.
