Ninkasi was the ancient Greek Goddess of beer and her namesake brew also has God-like qualities. Yet another outrageous adventure in brewing for the Wild Beer crew, Ninkasi is a Saison that is flavoured with New Zealand hops and fresh apple juice before being fermented with Brettanomyces yeast, with the secondary fermentation in the bottle using Champagne yeast. Characteristics from all these ingredients combine to deliver a beer that is sour, bitter, crisp, dry and fruity with a delicacy that makes it a wonderful aperitif.
