SUNRISE 2024 REDUX

Wild ale aged in Portuguese Douro wine barrels and refermented on 700g/L of 6 unique plum varieties in Ripe and semi ripe form juicy, tart and slightly tannic  this beer is a reinterpretation of our first release with several recipe and production evolutions.

Brewed on 100% solar power with absolute minimal intervention at every processing step allowing the ingredients to be presented as close to their natural taste within the beer.  Bottle conditioned.  Designed to be consumed as close to bottling date as possible for full fruit impact but will continue to develop flavour evolution for up to 10 years.

We are a 100% Oak fermented wild beer brewery based in the traditional hop growing county of Surrey ; we use exclusively hops grown on-site  for all our brewing which is made on a 10BBL solar power kit located at Hogsback Brewery. The hops grown on-site are Cascade, Fuggles and a unique heritage hop : Surrey White Bine ; these are beautiful hops with an incredible depth of flavour, aroma and oil.  Alongside the home grown hops we are big fans of New Zealand varietals and of course the classic and modern hops from the USA which are used only for dry-hopping.  We source the highest quality fruit for all our beers which means it is not always grown in the UK but always high quality and organically produced.

Our processes are absolute minimal intervention using centuries old methods borrowed from World artisan culture, to make modern beer with a twist that twist is a depth of flavour that is unachievable in modern craft brewing.

We use vintage Portuguese red wine barrels previously holding Douro wine 750L sherry barrels, French Oak Bordeaux and a small number of whisky barrels that previously held one-off Islay drams alongside the ubiquitous bourbon barrels of which we use  JD for their reliability and adaptability for blending.
