Claiming to be the world's first waste free beer, this unique Saison is brewed with brioche and croissants used in the mash and ugly pears saved from a supermarket bin. After that spent grain and hops were sent to a local farm as cattle feed.

Founded in 2013 by Russell Bisset, Northern Monk approaches beer making with an open mind to all methods of brewing. This has led to a hugely diverse range of beer and styles. Their move to a grade II listed building has seen the brewery move onto the next level, with a state of the art kit and onsite tap room (lovingly referred to as 'The Refectory) meaning you can taste these fantastic beers at source.
