Hazy IPA brewed in collaboration with WHC Lab, using their new Hop Unlock yeast!
For this hazy IPA we teamed up with WHC Lab to use their innovative hop unlock thiolised yeast strain. This contains an enzyme that enhances the yeast’s natural ability to biotransform hop compounds; unlocking bound thiols and creating new aromas and flavours. This gives us the ability to create an IPA with select hops not often found in this style.
We mash hopped with Saaz and added Perle and Idaho 7 to the whirlpool for high levels of bound thiols. We then loaded the dry hop alongside WHC’s thiol booster to achieve the highest quantities of volatile thiols* which have the most potential for yeast biotransformation.
*Volatile thiols are highly impactful aroma compounds.
