This wild ale is a cider and beer hybrid, born from the mutual respect and similarities between Baird & Dewar Farmhouse Cider and our brewery. Last Fall, Zeb Dewar met us at our brewery with a large amount of local, fresh pressed cider apple juice and mature, barrel fermented and aged wild/natural cider. We blended each into oak casks with our spontaneously fermented beer that had been maturing in barrel for an average of 18 months. After 6 months further fermentation in this secondary oak vessel, the beer was transferred and blended, then naturally conditioned in bottle for nearly another 6 months. Nearly three years in the making, we are excited to finally share this effort with you.
