The base for the Lou Pepe beers is 2 year old Lambic that has been aged in Bordeaux barrels. Fresh Cherries are then soaked in wine barrels before being added with a sweet liqueur, made from beer and saccharose, which causes refermentation in the bottle. Lou Pepe Kriek has a nice sourness with soft tannins and a backbone of it's oaked origins.

Founded in 1900, Cantillon is a small, traditional brewery in Brussels that specialises in the production of Lambic beers, spontaneously fermented by the wild yeasts that are native to the area in and around the Belgian capital. Cantillon's real craft is in the blending and ageing of the Lambics to create Gueuzes and Fruit Beers that are regarded as some of the finest in the world.
