After trying an incredible naturally processed coffee the last time we worked with Yorks, we knew we had to brew something special with it. The coffee we used had undergone partial fermentation before the fruit was removed, giving rise to sweet floral notes and aromas of tart cranberries and funky cocoa. After much consideration, we paired it with redcurrant and blackcurrant, resulting in a thick, rich sour with sweet, nutty cocoa aromas that give way to flavours of tangy redcurrant and blackcurrant.
