We pressed Normandy poiré-pears from the Plant de Blanc varietal, harvested at ‘Ferme de L’yonnière’ (Jérôme Forget), and co-fermented this juice with the juice from local heirloom apple varieties. As we didn’t separate the juice from their solids, we left enough yeast-nutrients present for a bone dry finish of fermentation. Bottled May 2020.
