For this Perzik, we macerated freshly hand-picked yellow peaches from the north of Spain. We only used two- and three-year old lambikken for macerating. Maceration took almost five months. The weighted average age of the peach blend upon bottling is almost 24 months. THe final proportion of fruit used is 384 grams per litre of Perzik.

Founded in 1887, 3 Fonteinen originally specialised in the blending of Lambic acquired from other breweries to produce outstanding Gueuze and Kriek beer. In 1998, they expanded and began brewing their own, however they still use beer from breweries such as Boon and Girardin to this day, making their output a true representation of the Lambic culture.
