A blend of Herefordshire bittersweet cider varietals, keeved and racked 4 times during fermentation to give an off dry gently sparkling Pét Nat cider.
A good fizz for Pet Nat, a barley straw hue. Aroma of ripe orchard floor apple and polished wood reminiscent of Mezcal. Good bubbling acidity with fruity apple sweetness and pithy sour and bitterness of apple skins. With time this cider opens up and becomes even fruitier and fuller. Fermented with wild yeasts. Alc. 5.4% vol.
