Bought together from multiple vintages, this cider is predominantly made from acid led varieties & some sweet apples; all harvested from orchards in the Exe valley, Devon.
After long, slow, natural fermentations & ageing, this cider has developed floral aromas, a wonderfully smooth texture, & rounded acidity. Reminiscent of the qualities of a Chablis, this is a still cider perfect for pairing to gently spicy foods & tangy Alpine-like cheeses. Expect aromas of white blossom & notes of greengage plums over a gun flint minerality.
Find & Foster says it all: cider makers Polly & Mat Hilton find & foster lost Devon orchards; often a century or more old, & containing rare or old Devon apple varieties
