Later season bittersweet cider apples were keeved and then blended in the spring to give a lively complex well conditioned celebratory cider. Dabinett, Yarlington Mill, Sheep's Nose, Ball's Bittersweet feature heavily.
Typical Oliver's bottle conditioned cider, full of earthy tannins, a touch of bitterness in the finish and enough bubbles to keep the balance sure. Spicey tobacco tannins on the nose, with a bitter rich orange taste; both Seville and Tangerine. Full mouthfeel and long finish. Chill well to 7-10C and pour with care.
